PRAWN TACOS

Farrah’s Taco Tortillas
Medium prawns, peeled and deveined
Corn on the cob, peeled (or can of corn kernels)
Olive Oil
Avocado, diced
Ice berg lettuce, shredded
Tomatillo salsa
Sour cream

Heat oil on a grill pan on a high heat. Grill corn until lightly charred.

Reduce the heat slightly and cook prawns for a few minutes until they are cooked through.

To Assemble: lay out your Farrah’s tortillas at place lettuce, prawns, avocado, corn and drizzle with the salsa and sour cream.

  • For an extra bit of zing serve with zest or juice of lime on top.
