PORK TACOS
Farrah’s 6” Tortillas
For the pork:
1 Tbsp Oil
1 small onion, finely chopped
1 clove garlic, crushed
1 jalapeno, finely chopped
2 tsp’s fish sauce
500g Pork loin, sliced into thin strips
2 Tbsps Sugar
2 Tbsps Water
For the slaw
¼ Red Cabbage, thinly sliced
1 Apple, thinly sliced in matchsticks or grated
Juice of 1 lime
Serve with:
Pickled Red onions
Queso
Heat oil in a pan over a medium heat. Add onion garlic and jalapeno and sauté until fragrant. Turn heat to high and add the pork and fish sauce- stir fry for a few minutes until the pork is no longer pink. Add the sugar and water and stir once then let the pork caramelize for 1 minute without stirring. Repeat this process until the pork is golden brown.
For the slaw, mix together the cabbage, apple and lime juice.
To serve, place slaw and pork in Farrah’s Taco tortillas and top with pickled onions and queso.
