Grilled Fish tacos
Farrah’s Taco Tortillas
Skinless white fish
Olive Oil
Coriander
Lime, zest and juice
Cos lettuce, chopped
Purple cabbage, shredded
For the Corn and Pineapple salsa:
Pineapple, finely diced
Corn kernels, drained and rinsed
Tomato, finely chopped
Lime, juice
Serve with Avocado Crema
Place fish, olive oil, coriander and juice and zest from 1 lime in a bowl and let marinate for 30 minutes.
Heat a pan on a medium-high heat. Remove fish from marinade and grill fish for 3 to 4 minutes on each side. Flake with a fork.
In a bowl mix the salsa ingredients.
In another small bowl mix together the avocado crema ingredients
To serve: Place lettuce, cabbage, salsa, fish and avocado crema in Farrah’s Taco Tortillas.
