BEEF MINCE TACOS
Farrah’s 6” Tortillas, white or wholemeal
Mexican spice mix (ground cumin, coriander, paprika)
500g Beef mince
1 tbsp Oil
1 Onion, diced
1 Capsicum, diced
1 can Chopped tomatoes
1 can Kidney beans, drained and rinsed
2 cups Lettuce, shredded
2 Tomatoes, diced
1 Avocado, smashed
Sour Cream to serve
Heat oil in a pan over a medium heat. Add onion and capsicum and sauté until soft, about 5 minutes.
Add the mince and the Mexican spices, stir in until mince is broken up and started to brown. Add the tomatoes and kidney beans and cook through for 5 minutes or until the mince is cooked.
In the Farrah’s Tortillas assemble with the lettuce, top with mince, remaining salad ingredients and drizzle with sour cream.
