Achiote Steak Fajitas

Farrah’s 8" Flour Tortillas
Beef - Skirt Steak
Achiote marinade for steak (ingredients in recipe below) 
Grilled
 - Red, Yellow and Green Peppers
 - Red Onions
 - Chili (Jalapeno) 

For a wonderful red rich marinade blend 1/2 a package of achiote paste, ground cumin, black pepper, ground cloves, jalapeno peppers, orange juice, red wine vinegar, 4 garlic clove, sea salt and fresh lemon or limes juice. Marinate your steak preferably overnight or min 4 hours. 

Season and fry vegetables in a hot cast griddle.

Cook the steak in a heavy skillet pan. When cooked to perfection, take out, rest and carve into slices, place back in the hot skillet to serve sizzling.

Quickly heat your tortillas on a griddle or flash grill over open flame to get the burn marks and flavour. Serve up on a wooden board ready for sharing and accompany with traditional sides and sauces.  

  • Add different sides like rice, beans, guacamole and salsa.
  • You can add some of the vegetables to the meat dish if serving for one, or limited by space.
